Czarina

  • 2 Parts Absolut Vodka
  • 1 Part Apricot Brandy
  • 1 Part Dry Vermouth
  • 1 Dash Bitters


Fill a mixing glass with ice cubes. Add all ingredients. Stir and strain into a chilled cocktail glass.

Winemaker Sam Baxter, has always had a keen focus on the grapes in the vineyard to achieve ideal ripeness and flavor development, leading to a winemaking style marked by minimal intervention. The yield of this approach is evident in our Terra Valentine wines that reflect a sense of place while showing the intensity of mountain grown fruit and balanced elegance.

Tasting notes: Blueberry, ripe black cherry and mulberry jam notes mingled on the nose with cocoa powder, cedar and spices with crushed sage. Bright, juicy fruit greets the palate with round, rich coating flavors of black fruit and licorice and a soft lingering finish.

Although Bill has a successful track record crafting blended wines, he enjoys the challenges and artistry that go into making our wine from a single vineyard.

The Daily Meal June, 2014: The wine’s color is deep garnet with purple hues – classic Cabernet color. Cherry, pomegranate, plum and berry aromas are followed by scents of cassis and cigar box. The wine is soft, full and rich; well balanced with good acidity and soft mouth filling tannins.

Tercos Malbec
Argentina


Ricardo Santos was the first winemaker to export this varietal from Argentina, and he began the process of making Malbec Argentina’s signature wine. This Malbec has fruity, aromatic characteristics of blackberry and ripe cherry. This first release has great volume and depth with a long finish, maintaining the soft tannins and easy drinkability of a classic Malbec.

Kermit Lynch Vin de Pays dVaucluse
France

55% Grenache, 20% Syrah, 15% Merlot, 10% Marselan
Sourced from the terroirs around Domaine de Durban, the grapes for this red Rhône are sourced from parcels next to the village of Beaumes-de-Venise. These vineyards were traditionally used for the family’s personal consumption, and many of the unused grapes were sold off in bulk. As none of this was for commercial bottling, the Leydier family made no effort to have these parcels included in the A.O.C. Côtes du Rhône when the boundaries were first established in 1937. Upon hearing that the family had been selling these grapes to the local cave cooperative in Vacqueyras, Kermit presented the Leydiers the idea of creating a value-driven second label. The plan soon evolved into a collaboration between the family and Kermit. This unfiltered red blend has a wholly satisfying mouthful of chewy black fruit, a dark, supple, tender fleshiness, and some grip that recalls its rustic terroir.

Crisp lime flavors, white pepper and lentils, followed by a mouthful of mineral notes and gooseberry. A long lingering finish. The 2013 received 90 pts from the Wine Enthusiast Magazine and it also received the "BEST BUY" mention.

Moss Roxx Lodi Ancient Vines Zinfandel

Lodi, California


This is not your everyday wine. A big flavorful Zinfandel from Lodi’s half to century year-old vines. A dense and dark red wine. Mature round tannins accenting generous cherry, raspberry, chocolate, caramel, and baking spice with a smooth, long finish. This Zinfandel is truly a delectable expression of Lodi’s signature terroir.

Gnarled and ancient, the Zinfandel vines from this vineyard produce some of California’s most sought-after fruit. Only vines that are more than a century old can produce a wine so supple and complex. These are vines that early pioneers to the state planted in their vision of founding a new paradise. This wine honors those early spirits with an image of the California Grizzly Bear on the bottle and the nectar within.

Green Flash Dia De los Serranos

Delicately Spiced. Turn up the heat with our Dia de los Serranos Double Stout. With rich layers of flavor reminiscent of your abuela’s celebrated mole recipe, this Double Stout reveals notes of roasted malt, coffee, and sweet bakers chocolate with a caliente kick of fresh Serrano Chiles. Paired with spicy foods or BBQ, it’s delicioso. ¡Dios mío! I’m going to need una mas…

Appearance - Pitch black, opaque liquid, and rich brown beer foam. Aroma - Prominent, fresh Serrano Chiles, roasted malt, coffee, and hints of cocoa. Flavo r- Serrano Chiles dominate the flavor followed by roasted coffee and baker’s chocolate, offers a slight to spicy burn in the finish (depending on individual sensitivity).

Coop Territorail Reserve
Territorial Reserve Bourbon Barrel Aged Imperial Stout

The 2014 Territorial Reserve Stout spent more than three months in bourbon barrels, aging to maturity. Individually scrutinized, the best barrels’ beer was then blended to create this year’s vintage. Marked with unmistakable notes of oak and whiskey, as well as strong flavors of dark chocolate and caramel, the culmination of flavor is distinctive and delicious.

Avery Brewing - The Czar
Imperial Stout


Behold the stunning crimson hues through the inky blackness. Inhale the noble Hallertau hops, spicy and floral. Savor the flavors redolent of English toffee, rich mocha, sweet molasses, candied currants and a hint of anise. We highly recommend cellaring additional bottles, as the Czar will continue to mature and become denser and more complex with age. The Czar is the first installment in their Dictator Series.

Food pairing: The roasted barley, chocolate, anise and mocha flavors of The Czar are accentuated by all manner of chocolate desserts. We also love The Czar with coffee-crusted filet mignon, as its bold flavors are able to stand up to the instensity of the coffee/meat combination.

Food pairing: The acidity and bitterness of duganA IPA is cleansing and refreshing while eating creamy, cheesy dishes such as pasta carbonara, fettucini alfredo or pepperoni pizza.

Avery Brewing - India Pale Ale

In the 1700s one crafty brewer discovered that a healthy dose of hops and an increased alcohol content preserved his ales during the long voyage to India (as depicted in our label) to quench the thirst of British troops. Today, we tip our hat to that historic innovation by brewing Colorado’s hoppiest pale ale. Avery IPA demands to be poured into your favorite glass to truly appreciate the citrusy, floral bouquet and the rich, malty finish.

Food pairing: Seafood dishes such as ahi tuna or seared scallops are a great match, as are creamy pasta dishes like fettucini alfredo or pasta carbonara. The acidity and hop bitterness of Avery IPA will cut through creamy flavors and textures, providing balance to the pairing.

Avery Brewing - White Rascal
Belgian Wheat


A truly authentic Belgian style wheat or “white” ale, this Rascal is unfiltered (yup, that’s yeast on the bottom) and cleverly spiced with coriander and Curaçao orange peel producing a refreshingly zesty classic ale.

Food pairing: Spicy Thai or Mexican dishes provide a level of heat and spiciness required to balance the semi-sweet, citrus flavors found in White Rascal. Our favorites are pad thai, green curry, blackened codfish and ceviche.

American Stout


This big, roasty stout takes flavor to the extreme. We aren’t afraid to use plenty of rich roasted barley and a mountain of hops to give this full-bodied stout that little extra something you’ve been looking for in a beer.

Food pairing: Hamburgers, steaks, shepherd’s pie and other hearty endeavors are best with our Out of Bounds Stout.

Avery Brewing - Ellie's Brown Ale
American Brown Ale


This beautiful, deep russet brew has the sweet and somewhat nutty character of Adam Avery’s late (1992-2002) Chocolate Lab, for which it is named. Chocolate malt gives this beer a brown sugar maltiness with hints of vanilla and nuts, while subtle hopping gives it an overall drinkability that’s second to none–just like Ellie!

Food pairing: Roasted meats prepared with spicy and/or smoky flavors are natural pairings for Ellie’s Brown Ale. Try ancho chili pork or beef tacos with chipotle mole.

Sierra Nevada Otra Vez

Cactus adds a twist to the traditional gose style.
"On our search for the perfect warm weather beer, we wanted something light bodied and thirst quenching, yet filled with complex and interesting flavors. We stumbled across the fruit of the prickly pear cactus, native to California. This tangy fruit is a great complement to the tart and refreshing traditional gose style beer. Otra Vez combines prickly pear cactus with a hint of grapefruit for a refreshing beer that will have you calling for round after round. Otra Vez!"

A Touch of Tartness. When looking for a drink to quench your thirst on a summer’s day, a touch of tartness can be just the thing. Before the modern era of beer making, European brewers discovered that by handling malt in a specific way, they could produce a slightly acidic wort which leads to bright, tart flavors, very different from what we expect in most styles of beer.

Inspired by these historic beers, we looked to create our own take on the German gose beer style. We use wort to create a lactobacillus culture, which in turn creates a mildly acidic flavor—the same way sourdough bread gets its tang. It’s a small amount, but it carries through and adds a pop of tartness and complexity for an incredibly refreshing beer.

Sierra Nevada Bigfoot Barleywine Style Ale
A cult-classic beast of a barleywine.

Bigfoot is a beast of a beer, brimming with bold flavors of bittersweet malt and heaps of aggressive whole-cone Pacific Northwest hops. First introduced in the winter of 1983, Bigfoot is a cult-classic beer brewed in the barleywine style, meaning a strong, robust, bruiser of a beer with the refined intensity of a wine. Bigfoot is prized by beer collectors for its supreme cellarability. Under the proper conditions, it can age like a fine wine, developing new flavors and character as it matures in the bottle. Each new release or “expedition” is vintage dated. Collect your own and see the flavors develop and progress.

Most beer should be consumed as fresh as possible to experience the bright flavors and complexity the brewer intends. Occasionally, though, some styles of beer will progress and improve with a bit of age—not unlike a fine wine. Beers that are high in alcohol, have a moderate amount of roasted grains, use a wild yeast, are barrel-aged, and are bottle conditioned are prime candidates for aging. Over time, gradual oxidation changes the flavors of the beer, adding notes of sherry or port wine and smoothing out harsh alcohol flavors. Vintage beers should be stored in a dark place with a cool and constant temperature for best results. Barleywines and Imperial Stouts are great candidates for aging, and both Bigfoot and Narwhal will progress in the bottle for years.

Sierra Nevada Beer Camp Tropical IPA
Fruit-forward hops take this IPA to the tropics.

Beer Camp is the ultimate brewing experience. Sierra Nevada invites beer fans into their brewery nearly every week to design their own beer and then they bring it to life. Each spring, they’ll feature one of their favorite collaborations from the previous year. This year’s selection features intensely aromatic hop varietals rich with the flavors of the tropics. They use Citra, Mosaic and El Dorado hops to create bright fruit-forward flavors of mango, papaya and bitter orange.

Ale versus Lager - All beer is broken down into two camps: ale or lager. The principal difference is the variety of yeast. Ales use a yeast called Saccharomyces cerevisiae, referred to as “top fermenting” because of the frothy foam created during fermentation. Lagers use a yeast called Saccharomyces pastorianus, called “bottom fermenting” because of the slower, restrained fermentation process. Ales are fermented at warmer temperatures and generally produce more fruity and spicy aromas from the yeast. Lagers are fermented at cooler temperatures and produce cleaner, more reserved aromas, which let the malt and hops shine through.

"Pitch black and potent, our take on the Imperial Stout is a rich, complex blend of dark flavors and aromas. This beer will evolve with age in the bottle and even in the glass. Sip slowly allowing it to gently warm. You will be rewarded for your patience with rich flavors."

Joseph James - Busker Brown
Brown Ale

FULL FLAVORED BROWN.
"When tasked with making a typically unexciting style, our brewers decided to do it their way. The end result is our full-flavored, hoppy, Busker Brown Ale. We’ve combined brown malt and chocolate malt to lend a toasty flavor and deep brown color, as well as crystal malt and melanoidin to supply a rich and lightly sweet malt backbone. We then dosed it with Northwestern American hops to provide a balanced bitterness, citrusy aromas, and a clean hoppy finish."

Sonoma Cider - The Hatchet - Apple
Made from Organic apples.

Occasionally it’s true that “less is more.” Take the organic apples in The Hatchet: the smaller the fruit, the bigger the flavor. But picking the smallest, most intensely-flavored apples is the easy part. It’s what happens next that matters, the blending and balancing, pairing sweet and tart varietals to yield a refreshing cider with noticeable complexity and a crisp, clean finish. It’s the hard cider equivalent of alchemy: turning little organic apples into great big flavor.

"The recipe for this elixir is an old family secret, but we’re willing to share it with our friends. Here it is: apples. Yep, that’s all there is to it. But of course it isn’t. Because the art is in the apples we pick—variety, maturity, size, color, about as many variables as you have fingers, and each one has to be just right to create the perfect blend of sweet, tart, crisp, dry, tangy, smooth, and refreshing."

Sonoma Cider - The Pitchfork - Pear

"Pears weren’t much on our radar when we first built the cidery, because we were all about apples. The challenge was to capture the creaminess of pears while steering clear of its cloying sweetness. The solution is The Pitchfork. It’s still crisp, refreshing hard apple cider, but with a distinctly pear accent and a creamy mouth feel that maintains cider integrity while adding a whole new dimension. Hard to describe, harder still to resist."

Sonoma Cider - The Anvil - Bourbon

"Apples and bourbon. Crispness and smoke. Sometimes we even surprise ourselves. Like when we took hard cider made from perfect Pacific Northwest organic apples and spiked it with a healthy measure of our proprietary barrel-proof bourbon flavor (alcohol-free to keep it legal). Someone called it “beguiling,” but there’s nothing nuanced about this cider—it’s intense, alive and totally memorable."

Sonoma Cider - The Pully - Absinthe Style

"Absinthe makes the heart grow fonder…of this surprising hard apple cider with a hint of anise. It’s not obvious that tart, crisp cider would pair with the black licorice flavor of Absinthe, at least not until you try it, and then it makes perfect sense. But don’t ponder too long; as one of our Limited Run ciders, The Pulley will be absent before you know it."
