Balsamic and Orange Marinated Flank Steak
Serves 6

1/4 cup olive oil
juice and zest of one orange, zest finely grated
3 Tbsp. balsamic vinegar
1 Tbsp. fresh marjoram, chopped (or use oregano or rosemary)

1 flank steak, 2 lbs, trimmed of excess fat (or use other cuts of beef or pork)
3 cloves garlic, thinly sliced
salt and freshly ground black pepper

Combine marinade ingredients in a one gallon zip bag or shallow pan just large enough to accommodate the flank steak. Add the steak and distribute sliced garlic on both sides. Marinade 1-2 hours.

Preheat grill or broiler. Remove steak from marinade. Season with salt and pepper. Grill for 5-7 minutes per side, or to an internal temperature of 135°F. for medium/medium-rare. Rest the steak on a wire rack or plate for 5 minutes before slicing. Slice very thin against the grain and serve immediately. Serve this easy and delicious grilled Flank Steak with grilled corn, salad and a loaf of crusty bread for a delicious meal your friends are sure to enjoy.
